  • 1 ½ pounds 80% lean ground beef
  • 1 teaspoon unflavored powdered gelatin, such as Knox
  • 1 tablespoon water
  • 1 recipe prepared “American” Cheese (above), or 8 slices store-bought American cheese, cut into 3½-inch rounds with a biscuit cutter or a glass
  • Kosher salt
  • Freshly ground black pepper
  • Cooked onions (recipe a bove)
  • Dill pickle slices, for serving
  • 4 potato rolls, for serving
