Hurst 15 Bean Vegetarian Chili (altered by Beth)
Quarantined with Covid and have been craving soup and had a can of chipotle peppers to try
Ingredients
  • 1 package HamBeens® 15 BEAN SOUP® (Chili variety? see notes)
  • 4 Tbsp. chili powder
  • 8 to 10 cups water (cook beans with 8 cups) - do not use broth. I subbed 12-oz. lager for some of the water
  • 1 each of green, red, and yellow peppers (or sub carrots or a mix)
  • 1 medium onion diced
  • 3 to 4 whole cloves fresh garlic or equivalent minced
  • 2 cans diced tomato w/ green chili
  • 1 can stewed tomato (use diced instead)
  • 1 can sweet corn (or frozen)
  • ⅓ to ½ can chipotle peppers in sauce, roughly chopped
  • 1 to 3 Tblsp. tomato paste
  • Zest from 1 lime (optional - splash of lime juice?)
  • If not using Hurst flavor package - add 2 to 3 tsp. salt plus cumin/garlic powder/onion powder
  • Optional: 1 potato, or 1 can sliced potatoes - see notes
