One-Pot Louisiana Chicken Pasta
Ingredients

  • 1 ½ lbs boneless, skinless chicken cutlets (or cut full chicken breasts in half lengthwise)
  • 1 ½ tbsp cornstarch
  • 1 large egg, beaten with 1 tbsp water
  • 3 tbsp panko breadcrumbs
  • ¼ cup seasoned breadcrumbs
  • 3 tbsp grated parmesan cheese
  • 1 tsp Cajun seasoning*
  • salt to taste (optional)
  • 2 tsp olive oil
  • subheading: FOR THE PASTA:
  • 8 ounces bow tie or other short shape pasta
  • 8 ounces sliced mushrooms
  • 1 small yellow bell pepper, diced (about 1 ½ cups)
  • 1 small red pepper, diced (about 1 ½ cups)
  • 1 small red onion, diced (about 1 cup)
  • 4 garlic cloves, minced
  • 2 cups fat free chicken broth
  • 1 cup unsweetened, original almond milk
  • 1 tbsp Cajun seasoning*
  • ⅓ cup half and half (full fat)
  • ½ cup + 1 tbsp grated parmesan cheese
  • ½ tsp kosher salt
  • black pepper to taste
  • cayenne or red pepper flakes (optional)
