Scallion Oil Bucatini with Runny Eggs
Ingredients
  • 1 tablespoon kosher salt plus a pinch, divided
  • 6 scallions, trimmed
  • 3 tablespoons extra-virgin olive oil
  • 2 cloves garlic, minced
  • ¼ teaspoon crushed red pepper (optional)
  • 8 ounces bucatini, fettuccine, spaghettoni or spaghetti
  • ½ teaspoon finely grated  lemon zest
  • 1 tablespoon lemon juice
  • 1 tablespoon soy sauce
  • 1 ½ teaspoons unsalted butter
  • ¼ teaspoon freshly ground black pepper, plus cracked black peppercorns for serving
  • 4 large eggs
  • Finely  grated Parmesan cheese, for serving (optional)
