Jake Cohen's White Bean Chicken Soup
Ingredients
  • 2 tablespoons olive oil
  • 2 pounds (4 medium) chicken breasts
  • Kosher salt and freshly ground black pepper
  • 4 celery stalks, diced
  • 3 leeks, white and light green parts only, halved, rinsed, and thinly sliced
  • 1 bunch green Swiss chard, stems thinly sliced and greens roughly chopped
  • 2 (15-ounce) cans cannellini beans, drained
  • 8 cups chicken stock
  • 2 bay leaves, fresh or dried
  • ½ cup minced fresh dill
  • 2 tablespoons freshly squeezed lemon juice
