Fried Tomatoes
Ingredients
  • ½ cup all-purpose flour
  • 1 ¼ tsps. dried basil
  • 1 ¼ tsps. dried oregano
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 2 medium, firm red tomatoes, sliced ½ inch thick
  • Vegetable oil
  • ¾ cup shredded mozzarella cheese
Steps
  1. In a bowl, combine flour, basil, oregano, salt and pepper.
  2. Dip tomatoes in flour mixture.
  3. In a skillet, fry tomatoes in oil, a few at a time, until golden on both sides.
  4. Top with cheese and cook until cheese is melted. Drain on paper towels, serve warm.
