Chivo Guisado aka braised goat Dominican style
Ingredients
  • 1 kg - 2.2 lbs. of goat meat (with bones)
  • Juice of 1 orange (instead of 1 large (or 3 small) sour orange)
  • Juice of ½ a lime
  • 2 tbsp of Worcestershire sauce
  • 2 bay leaves
  • 1 large white onion
  • 1 bunch of coriander
  • 1 bunch of spring onions
  • 2 garlic cloves
  • Salt to taste (about 1 tsp)
  • 3 tbsp of oregano
  • For the braise

  • Marinated goat meat
  • 2 tbsp of oil (I used sunflower oil)
  • 1 tbsp of brown sugar
  • 2 tbsp of tomato paste
