Keto Cheesy Broccoli, Sausage & Egg Casserole

Ingredients
  • 8 Eggs + 16 TB Egg Substitute ( or can use 14 Eggs)
  • 150g turkey sausage patties diced
  • 4 cups frozen broccoli florets
  • 2 TB Half & Half
  • 1 scoop (28g) Quest Multipurpose (optional)
  • 1 cup shredded cheese
  • 2 tsp of Creole Seasoning (or any seasoning you like with eggs)
Steps
  1. Spray a 4 QT casserole dish with cooking spray and set aside. Preheat oven to 375
  2. Steam broccoli according to package directions, let set a few minutes til cooled.
  3. Cut broccoli into small pieces and layer on the bottom of the casserole dish. Sprinkle about ¼ cup of the shredded cheese over broccoli.
  4. Cook sausage patties according to directions. Let cool. Dice and sprinkle over the broccoli and cheese in the casserole dish.
  5. In a medium bowl mix together eggs, egg substitute, half & half, seasoning. If using Quest powder mix in and blend well (Immersion blender works great)
  6. Pour egg mixture over the meat & veggies in the casserole dish. Gently stir with a fork to make sure egg mixture is well distributed.
  7. Sprinkle remaining cheese over the top.
  8. Bake 25 minutes uncovered. Cool for about 5 minutes.
