TERESA’s MORROCCAN SPICED SOUP WITH COUS COUS DUMPLINGS
Ingredients
  • 2 Tins of chopped tomatoes
  • 2 Tins of Carrots
  • 1 tin of baked beans
  • 1 veg cube or stock pot into 300ml of boiling water
  • 3 small pickled onions
  • 2 teaspoons of Moroccan spice 3 if your brave like me
  • Method for soup makers
  • 1/If using a soup maker just put your stock in first at the bottom this will help minimise burning at the bottom.
  • 2/Then add your Carrots, then your Tomatoes, then your beans and throw your onions on the top and add you Moroccan spices.

  • You could serve with some of my syn free Couscous Dumplings x
  • Tomato soup with couscous dumplings, all syn free
  •  
  • To make the Dumplings you will need if only wanting to make a few
  • A bowl
  • A mug
  • Plain Couscous shops own brand perfect for these.
  • 1 egg
  • 2 stock pots or oxo cubes any flavour you like eg curry, marmite anything
  • Microwave plate
  • Method
  • 1/Fill a mug with dried couscous
  • 2/ tip couscous into a bowl
  • 3/ boil your kettle
  • 4/ get the mug you used for dry couscous and add your 2 stock pots and fill cup up with boiling water and stir.
  • 5/ Tip your stock all over the dried couscous and mix them leave for the couscous to absorb the liquid.
  • 6/ once it’s all been absorbed add your egg and mix in with a fork.
  • 7/ get your microwave plate and make your dumplings by gently squeezing it into a ball shape and place all around the outside of the plate as mine are.
  • 8/ place in your microwave and cook for 2 mins on full power for a 900 to 1000watt Or E microwave
  • 9/ Turn all your dumplings over and cook for a further 2 mins on full power then your done
  • If you want to make a batch load
  • Use the whole 500g bag of plain couscous and 1 and a half pints of stock and 3 eggs and follow all the above adding in the order I’ve stated only difference is the amount of couscous and stock and eggs
Steps
  1. For Pan cooked soup just throw all the ingredients in and cook until it’s all heated through and blend it up.
  2. You don’t even need to cook it if you intend upon freezing it as it will heat up from frozen. Just throw it all straight into your blender then freeze until your ready to use and just microwave until cooked through no need to thaw either.
