Cheesy Mexican Beef and Rice Skillet
Ingredients
  • 2 teaspoons olive oil
  • 1 small onion, diced (about ¾ to 1 cup)
  • 2 cloves garlic, minced
  • 1 pound lean ground beef
  • 3 tablespoons taco seasoning
  • 2 tablespoons tomato paste
  • ¾ cup sweet corn, fresh or frozen
  • ¾ cup long grain white rice
  • 1 (15 ounce) can diced tomatoes, (preferably fire-roasted, I pulse mine in a mini processor for smaller pieces)
  • 1 (15 ounce) can low-sodium beef broth, (or about 2 cups)
  • ¼ cup water
  • 2 cups freshly shredded cheese, cheddar, cheddar jack or colby jack cheese
