Ingredients
- 2 c fresh or frozen vegetables, chopped to bite size (combine veggies that are similar in texture and that typically cook in about the same amount of time)
- 2 tbsp water
- 2 tbsp butter or olive oil
- 1 tsp Penzeys Fox Point Seasoning or The Gourmet Collection Roast Vegetables & Fries Spice Blend, or the below ideas
- subheading: For sweet peas:
- ½ tsp salt
- ¼ tsp pepper
- 1 tbsp sugar
- subheading: For broccoli:
- Dress to taste with butter, olive oil, mayonnaise, lemon pepper, lemon zest or juice, seasoned rice vinegar, balsamic vinegar, ground black pepper, toasted almonds, or sesame seeds.
Steps
- Place veggies in a large, microwave safe bowl in one layer. Add the water. Cover the bowl with saran wrap (or a lid) and microwave for 2 minutes. If they’re not ready, flip and place back in the microwave for up to 4 minutes, flipping at each minute interval.
- Alternately, boil 1" water in a covered pot, reduce heat to med-low and steam veggies in steamer basket for time given in the Notes section.
- Drain veggies, stir in flavorings, and serve.
