  • In a six-quart Dutch oven or large pot, start by browning four ounces of diced pancetta in ΒΌ cup of olive oil. Then add two cups each of diced onions, leeks, carrots, and celery, and six minced cloves of garlic. Cook over medium heat until the vegetables are tender, about 10 minutes.
