Cauliflower, Chilli and Parmesan Fritters
Ingredients

  • 1 medium cauliflower (about 750g)
  • 1 large egg, beaten
  • 1 small onion, finely diced
  • 2 garlic cloves, finely diced
  • 100g chickpea (gram) flour, or as needed
  • 80g Parmesan, grated
  • Small handful mixed herbs, such as parsley, basil and coriander, finely chopped
  • Pinch of chilli flakes
  • Ghee or butter, for frying
  • subheading: For the yogurt:
  • 1 small garlic clove, minced
  • 200ml full-fat natural yogurt
  • 2 tbsp chopped chives
  • 2 tbsp extra-virgin olive oil
