Skillet Hot Honey Chicken with Hearty Greens

  • 2 pounds bone-in, skin-on chicken thighs (4 to 6 thighs)
  • Kosher salt and pepper
  • 1 tablespoon extra-virgin olive oil
  • 1 small hot chile, thinly sliced (such as jalapeño, Fresno or serrano), or to taste
  • 1 large bunch or head of hearty greens, such as escarole, mustard greens or kale (about 6 ounces)
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
