Vegan Quinoa Chili
Ingredients
  • 1 tablespoon extra-virgin olive oil
  • 2 large zucchini, quartered lengthwise and sliced
  • 1 large red onion, chopped
  • 1 ½ tablespoons chili powder
  • 1 ½ teaspoons ground cumin
  • 3 cups water
  • ¾ teaspoon salt
  • ¼ teaspoon ground pepper
  • 1 (28 ounce) can unsalted crushed tomatoes
  • ¾ cup tri-color quinoa
  • 1 cup frozen corn kernels
  • 2 (15 ounce) cans unsalted black beans, rinsed
  • 2 tablespoons chopped fresh cilantro, plus more for garnish
  • 2 tablespoons lime juice
  • Vegan Cheddar cheese and dairy-free yogurt for serving
