  • 2 ½ cups ( 20 fluid ounces) low-sodium chicken stock
  • Salt and pepper to taste

  • 4 pieces raw dark meat poultry parts a combination of skin-on bone-in turkey or chicken thighs, legs, and wings works well
  • 2 stalks celery roughly chopped
  • 2 large carrots roughly chopped
  • 1 large yellow onion peeled and roughly chopped
  • 2 stems fresh rosemary
  • 1 teaspoon kosher salt
  • 1 tablespoon ( 14 g) extra virgin olive oil
