Eggplant Hummus Copycat Recipe
Here’s a recipe I got from a YouTuber that I was about to try and still am it’s the closest supposedly to the trader joe recipe enjoy!
Ingredients
  • 2 15ox cans of chickpeas, rinsed and drained
  • 1 small eggplant
  • 6 large cloves of garlic
  • ½ large lemon
  • ½ cup water
  • ¼ pomegranate juice, unsweetened
  • 3 tbsp tahini
  • 1.5 tsp salt
  • 1 tsp cumin
  • 1 tsp baking powder

Steps
  1. Preheat oven the 375.
  2. Half and score the eggplant, then roast for about 45 minutes or until very soft. In the last 15 minutes add the peeled garlic cloves to the pan to roast.
  3. Let cool, then remove the eggplant skin and discard.
  4. Next, add chickpeas, eggplant, garlic, tahini, water, lemon juice, salt, cumin, and baking powder to a blender and set aside.
  5. Then bring pomegranate juice to a boil then reduce to medium heat and let simmer until most of the liquid is evaporated and your left with a thick syrup. This should make about ½ tbsp of pomegranate syrup.
  6. Next add the pomegranate syrup to the blender and blend very well. I blend for about 1 minute.
  7. Finish by using a mixer to whip some air into the hummus for about a minute to make it nice and fluffy like the Trader Joe's version.
  8. Let the hummus rest overnight tho thicken and marinate and viola! You have your very own, homemade version ofTrader Joe's famous eggplant hummus. Hope you enjoy!
Notes
  • Note: you don't want to make the syrup in advance because it will harden as it cools. Make it right before adding it to the blender and then soak the saucepan immediately for easy clean up
