Baingan Bharta (Eggplant Curry)
Ingredients
  • 2 medium eggplants (about 1 pound each)
  • 4 garlic cloves
  • ¼ cup canola oil
  • 1 large yellow onion, finely chopped (about 2 cups)
  • 1 tablespoon minced fresh ginger (from 1 [1-inch] piece)
  • 1 ¼ teaspoons Kashmiri chile powder or ¼ teaspoon cayenne pepper
  • 1 teaspoon cumin seeds
  • ⅛ teaspoon ground cloves
  • 1 pound ripe tomatoes, cored and diced (about 3 cups)
  • 1 cup chopped cilantro (leaves and tender stems), plus more for garnish
  • 1 tablespoon fresh lime juice
  • 3 ½ teaspoons kosher salt
  • Roti or naan, for serving
