Low-Carb Cheesy Baked Cauliflower Tots

Ingredients
  • ° ½ head if cauliflower, coarsely chopped
  • ° ⅓ cup of reduced fat cheddar cheese
  • ° ¼ cup coarsely grated parmesan cheese
  • ° 2 tablespoons if almond flour
  • ° slightly less than ½ a teaspoon of salt
  • ° ½ teaspoon of spike seasoning or all-purpose seasoning
  • ° ground pepper to taste
  • ° 1 egg
Steps
  1. ° preheat oven to 400°F
  2. ° spray mini muffin pan with non-stick spray
  3. ° put cauliflower in bowl, cover in cling wrap, microwave on high for 2 minutes until slightly soft
  4. ° drain any excess water from cauliflower
  5. ° add cheddar, parmesan, almond flour, salt, seasoning, pepper and stir until combined
  6. ° add egg and stir until combined
  7. ° bake for 15 minutes in each side until slightly brown
