Pfeffernuesse
Ingredients
  • ⅓ cup molasses
  • ¼ cup butter
  • 2 cups flour
  • ¼ cup brown sugar, packed
  • ½ tsp. baking soda
  • ¾ tsp. ground cinnamon
  • ¼ tsp. ground cardamom
  • ¼ tsp. ground allspice
  • ⅛ tsp. pepper
  • 1 beaten egg
Steps
  1. Combine molasses and butter in a saucepan.
  2. Heat and stir over low heat until butter melts.
  3. Remove from heat.
  4. Cool to room temperature.
  5. Stir together flour, brown sugar, soda, and spices in a large bowl.
  6. Set aside.
  7. Stir egg into molasses mixture.
  8. Gradually stir in flour mixture until combined.
  9. Transfer dough into a bowl.
  10. Cover and chill about 1 hour or until easy to handle.
  11. Divide dough into 12 portions.
  12. On a lightly floured surface, roll each portion into a 10-inch rope.
  13. Cut ropes into ½ to 1" pieces.
  14. Place pieces ½-inch apart on an ungreased shallow baking pan.
  15. Bake at 350° for 10 to 12 minutes or until edges are firm and bottoms are lightly browned.
  16. Remove cookies and cool on paper towels.
