  • 12 ounces boneless, skinless chicken breasts , trimmed and cut into 1-inch pieces
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon minced fresh parsley
  • ½ teaspoon finely grated lemon zest plus 2 tablespoons juice
  • ½ teaspoon honey
  • ½ teaspoon dried oregano
  • ½ green bell pepper , halved, stemmed, seeded, each quarter cut into 4 chunks
  • ½ small red onion , ends trimmed, peeled, cut into 4 chunks
  • 2 (8-inch) pita breads
