Smashed Parmesan Potatoes

Ingredients
  • 3 pounds red-skinned potatoes
  • ⅔ cup freshly grated Parmesan cheese
  • ½ cup extra virgin olive oil
  • salt and freshly ground black pepper to taste
Steps
  1. Put potatoes in a large pot with water to cover by at least 2 inches. Cover and bring the water to a boil.
  2. Continue boiling until potatoes are tender, about 15 minutes. Drain, reserving ¾ cup of cooking liquid.
  3. Return potatoes to pot. Coarsely mash potatoes with a fork, adding enough of the reserved cooking liquid to moisten. Stir in Parmesan and olive oil.
  4. Season to taste with salt and pepper and serve.
