Smashed Parmesan Potatoes

Ingredients
- 3 pounds red-skinned potatoes
- ⅔ cup freshly grated Parmesan cheese
- ½ cup extra virgin olive oil
- salt and freshly ground black pepper to taste
Steps
- Put potatoes in a large pot with water to cover by at least 2 inches. Cover and bring the water to a boil.
- Continue boiling until potatoes are tender, about 15 minutes. Drain, reserving ¾ cup of cooking liquid.
- Return potatoes to pot. Coarsely mash potatoes with a fork, adding enough of the reserved cooking liquid to moisten. Stir in Parmesan and olive oil.
- Season to taste with salt and pepper and serve.
