Ham and Cheese Slab Quiche

  • 1 cup whole milk
  • 1 cup heavy cream
  • 4 fresh thyme sprigs
  • 1 lemon, zested
  • 3 large eggs, plus 1 large egg yolk
  • ¼ teaspoon kosher salt
  • 1 teaspoon cracked black pepper
  • 1 tablespoon Dijon mustard
  • 6 ounces thinly sliced ham (ideally jambon de Paris or prosciutto cotto)
  • 6 ounces Gruyère, grated (about 1¾ cups)
