Rice with Black Mushrooms and Shrimp
Ingredients
  • 2 cups long-grain rice

  • ¼ cup chopped onion and parsley
  • 1 scotch bonnet pepper
  • 1 cup frozen Lima beans or green peas
  • 3 tablespoons olive oil or vegetable oil
  • 6 cloves & 2 thyme sprigs
  • 2 teaspoons salt
  • 2 teaspoons lime juice
  • 6 cups water
  • ¼ crushed scallion
