Spaghetti Sauce (Buchanan-style)

Ingredients
  • 1 lb. Italian mild sausage
  • 1 medium onion
  • 1 to 2 cloves garlic
  • 4 (15-oz.) cans tomato sauce
  • 1 (15-oz.) can diced Italian stewed tomatoes
  • 1 (6-oz.) can tomato paste
  • 2 T. Italian seasoning
  • 1 T. rosemary
  • 2 T. sugar
  • 10 shakes Tabasco sauce
Steps
  1. Sauté the onions and garlic in olive oil (or cooking spray) over medium heat until the onions are translucent, then add the Italian sausage.
  2. Sauté until the sausage is cooked through, then stir in the remaining ingredients.
  3. Bring the sauce to a boil, then reduce the heat to medium low, and simmer at least one hour (best to simmer on low for at least two hours), stirring occasionally (so the sauce doesn't stick to the bottom of the pot).
  4. Serve hot over your choice of cooked pasta.
