Ingredients
- Here's a potato side dish I've made a couple of times. It's just a tasty different EASY way to have potatoes. I can't recall if I copied this originally from a recipe book or online as just followed some notes I'd made. Sort of a fast, juicy, Bombay potato style dish.
- IP to saute, cover base with a thin layer of veg oil (roughly 3 tbsps) Briefly saute some diced onion, 1 tbsp of cumin seeds together until fragrant. Add sliced potatoes, saute to coat. Turn off saute. Add 3 or 4 chopped tomatoes, ⅓ cup water, seasoning and whatever spices you like (I added some tumeric and fresh ginger). Stir. HP 3 mins....NR pressure. Stir through some coriander or whatever you like (spinach or rocket I have tried too) Serve!

- Looks lovely! Would be a proper Bombay potato if you added some ground cumin and coriander plus a little garam masala and garlic and chilli!
