Arrabiata Sauce

Ingredients
  • 1 tbsp olive oil
  • 1tsp thyme chopped
  • 1 tbsp basil chopped
  • ½ cup chopped onions
  • 2 tsp chopped garlic
  • 1tsp chopped green chillies
  • ½ cup chopped red peppers
  • 2 cups tomato juice
  • a pinch of chilli powder
  • 1 tsp basil
  • 1 tsp dried oregano
  • dash of red wine
  • salt to taste
  • 2 cups boiled fusilli or penne
  • some zucchini and carrots
  • for the garnish
  • 1 tsp dry red chilli flakes
  • grated parmesan to taste
Steps
  1. 1. Heat the oil in a pan, add the onions, garlic and green chillies and sauté till the onions turn golden brown.
  2. 2. Add the tomatoes and sauté on medium for 2 minutes
  3. 3. Add the tomato juice, chilli powder, basil, oregano, wine, and salt, mix well and cook for 3 minutes on medium flame.
  4. 4. Add the pasta and mix well and ensure the pasta is well coated in the sauce. Remove from flame.
  5. 5. Serve hot and garnish with cheese and chili flakes.
