/u/Spiderhugs Divorce Carrot Cake
Ingredients
  • 235ml oil
  • 170 to 255 g of honey
  • 3 eggs
  • 500 g/20 oz can crushed pineapple, drained
  • 180 g carrot, grated
  • 250 g flour
  • 2 tsp cinnamon
  • 2 tsp baking soda
  • 112 g shredded coconut, unsweetened
  • 55g walnuts
  • raisins

  • subheading: Frosting:
  • 450 g softened cream cheese, cut into cubes
  • 120 g softened butter, cut into cubes
  • 1 to 2 teaspoons vanilla extract
  • 115 g sifted powdered sugar
  • juice of half a lemon, to taste
Steps
  1. Pre-heat oven to 350 F.
  2. Grease and flour two cake pans, I use two regular round cake 8” pans.
  3. Combine dry ingredients (flour, cinnamon and baking soda) in a medium bowl.
  4. Combine oil, honey, eggs, pineapple in a large bowl.
  5. Mix dry ingredients and any remaining items into the “wet” bowl.
  6. Pour into cake pans and bake at 350 F for 45 mins. Let let the cake cool completely before frosting.

  8. In a bowl, beat cream cheese and butter until smooth, about 1 minute
  9. Add vanilla, then slowly incorporate powdered sugar. Scrape down the sides of the bowl frequently to prevent lumps.
  10. Once smooth, taste and adjust as needed with lemon juice.
  11. Frost the top of the first layer, put on the top layer and then frost the top and sides of the whole thing.
