Mini Instant Pot Lava Cakes by Deb

Servings: Makes 7 (1 tray) or 14 (2 trays) mini lava cakes
Ingredients
  • note: *ingredients in parentheses are for ½ recipe or 1 tray**
  • 1½ sticks butter (¾ stick)
  • 6 eggs (3 eggs)
  • 1½ cups semi sweet chocolate chips (¾ c.)
  • 1½ tbs Vanilla (¾ Tbsp.)
  • ½ c. + 1 Tbsp. flour (4½ Tbsp.)
  • 1½ cups powdered sugar (¾ c.)
  • subheading: for topping:
  • Vanilla Ice cream
  • subheading: Cookware needed:
  • 2 flower shaped silicone trays
Steps
  1. Place chocolate chips and butter in a large bowl and microwave for 2 minutes. Mix until well combined.
  2. Mix in powdered sugar until smooth.
  3. Add eggs and stir until well combined.
  4. Add Vanilla and flour and stir until well combined.
  5. Spray each silicone tray with cooking oil.
  6. Pour batter into trays.
  7. Place trivet in instant pot with one cup of water.
  8. Place 1 tray on the trivet. Then place second tray on top of 1st tray OFFSET from 1st tray.
  9. Place pot on MANUAL HIGH PRESSURE for 7 minutes.
  10. Do a quick release.
  11. Remove trays from the Instant pot. Then turn trays upside down on a plate and allow gravity to release the cakes.
  12. Top with vanilla ice cream.
Notes
  • Full recipe makes 2 trays or 14 mini lava cakes.
  • ** ½ recipe makes 1 tray or 7 mini lava cakes (see amounts in parentheses above).
