Ingredients
  • 4 salmon fillets
  • 2 cups baby potatoes, whole
  • 1 cup green beans (frozen or fresh)
  • 2 cups rice (optional)
  • 1 tbs parmesan
  • 1 tbs vegetable oil
  • ½ cup BBQ sauce
  • 1 tbs brown sugar
  • Salt & pepper to taste
  • 1 cup water
Steps
  1. Put potatoes in bowl with oil, parmesan, salt & pepper. Toss to coat.
  2. Put the potatoes in the bottom of the Instant Pot. Add 1 cup water. Place the pot's trivit over the potatoes.
  3. Place each piece of salmon on foil.
  4. Mix BBQ sauce & brown sugar together and brush piece of salmon.
  5. Sprinkle with salt and pepper.
  6. Wrap each piece of salmon up in tin foil.
  7. Place the salmon packets on top of the trivet.
  8. Close the Instant Pot and cook the salmon and potatoes on high pressure for 10 minutes.
  9. Do a quick release right after cooking time is done and enjoy!
  10. subheading: For rice & green beans:
  11. Add rice and water to rice cooker. Add beans in steamer tray, place in rice cooker. Follow the instructions that come with your rice cooker.
  12. When done drain beans, serve rice with meal & enjoy!
