Servings: Lots, but no worries
Ingredients
  • 1lb capacollo ham, cut into cubes
  • 1lb hot Italian sausage, cut into thicker slices
  • 1 tbsp vegetable oil
  • 2 large onions chopped
  • 1 green pepper chopped
  • 1 cup chopped celery
  • 1tbsp minced garlic
  • 3 cups chicken broth
  • 1 16 oz can rotel or other
  • 1 bay leaf
  • ½ tsp tabasco sauce
  • ½ tsp Tyme
  • ¼ tsp Allspice
  • 1½ cups uncooked rice
Steps
  1. Heat oil in Cuisinart frying pan, add your sausage and cook for 10 minutes until browned
  2. Add onions, green pepper, celery, garlic and ham and saute until vegetable are soft (aprox 8 to 10 minutes)
  3. Add chicken broth, Rotel and the bay leaf. Stir in tabasco, thyme and allspice
  4. Simmer uncovered for 15 minutes, then bring to a boil and add your rice. Cover and reduce heat and simmer for another 15 minutes
  5. It may be necessary to add more broth at this point. Cook until the rice is tender
  6. Serve with your favorite hot sauce
Notes
  • If people want you can add shrimp, but I think it's better without
