Burmese Chicken, Cardamom, Lemon and Coconut Curry
Ingredients
  • 3 tablespoons light olive or peanut oil
  • 2 finely sliced onions
  • 6 very large cloves garlic, finely chopped
  • 3 tablespoons finely chopped fresh ginger
  • 2 to 4 small red chillies, finely chopped
  • 4 to 6 nice fat cardamom pods
  • 2 teaspoons turmeric
  • 5 teaspoons sweet paprika
  • 3 teaspoons Thai red curry paste
  • 1 lemon
  • 1 small can (140ml) low fat or regular coconut cream
  • 400g can of chopped tomatoes
  • Salt, to taste
  • 8 large whole chicken thighs (bone in), skin on or off
  • Garnish: Some fresh herb sprigs
