  • 4 cups sliced mushrooms stems removed
  • 1 tablespoon butter
  • 2 garlic cloves minced
  • 1 shallot finely diced
  • ½ to ¾ cup heavy cream add to taste
  • 3 tablespoons miso paste white or brown
  • ½ cup grated parmesan cheese
  • salt and pepper to taste
  • ¾ cup pasta water added gradually, more as needed
  • chopped roasted nori, red pepper flakes for garnish, to taste
