Vietnamese Lemongrass Chicken (The Best Marinade!)
Ingredients
  • 2 to 2 ½ pounds boneless skinless chicken thighs pounded to an even thickness
  • 1 tablespoon olive oil

  • ¼ cup minced shallots
  • 3 tablespoons chopped lemongrass from white inner part of 2 stalks* (see note)***
  • 3 tablespoon fish sauce
  • 2 tablespoons less sodium soy sauce
  • 2 tablespoon lime juice
  • 2 tablespoon brown sugar
  • 1 tablespoon Thai red curry paste
  • 1 tablespoon Asian sweet chili sauce (optional)
  • 1 tablespoons olive oil
  • 3 garlic cloves minced
  • 2 teaspoons freshly grated ginger
  • 1 to 3 teaspoons red chili paste* like Sambal Oelek
  • 1 teaspoon dried basil
