Mexican version of an Italian classic

Ingredients
  • Corn tortillas
  • 1 lb ground beef
  • 2 cans Chili w/ beans
  • 4 cups shredded cheddar cheese
  • 15oz jar of salsa
Steps
  1. Preheat the oven to 375°F.
  2. While the oven is preheating, brown the ground beef and drain the fat. Add in the 2 cans of chili and stir to mix. Remove from heat.
  3. In a deep casserole dish, spread half the jar of salsa on the bottom. Add a layer of corn tortillas to cover. It's okay to cut tortillas to fill to the edges without too much overlap. Add a thin layer of the meat and chili mixture. Top with a layer of shredded cheddar.
  4. Repeat layering tortillas, meat mixture, and cheese until close to the top of the casserole. After the last cheese layer, add a final layer of tortillas, the other half of the jar of salsa, and a final thin layer of shredded cheddar.
  5. Bake uncovered in the oven for 45 to 60 minutes. You want that top layer of cheese melted and bubbly. Let rest for 15 minutes after taking it out of the oven so it can set a bit.
Notes
  • This is a very filling dish that reheats well.
  • If desired, you can sauté some diced onions in 1 tablespoon of butter before adding the ground beef.
