Ingredients
  • 2 eggs
  • 1 Tablespoon fresh parsley, chopped (or 1 teaspoon dried)
  • ⅔ cup milk
  • 3 slices bread, torn into pieces
  • 1 teaspoon salt
  • ½ cup onion, chopped
  • 1 teaspoon dried basil
  • ½ cup carrots, grated
  • ¼ teaspoon pepper
  • 1 cup shredded cheddar or mozzarella
  • 1.5 pounds lean ground beef (or turkey)

  • ½ cup tomato sauce
  • 1 teaspoon mustard
  • ½ cup brown sugar
Steps
  1. Preheat oven to 350 degrees.
  2. In a large bowl, beat eggs. Add milk and bread. Stir in onions, carrots, cheese, parsley, salt, basil and pepper. Add beef and mix well.
  3. Put in a sprayed shallow baking pan or loaf pan and bake for 45 minutes.
  4. Mix together tomato sauce, brown sugar and mustard. Spoon over meat loaf and bake for 30 minutes longer or until meat is done.
