Ingredients
- Ground Beef Approximately 1 pound
- Diced Onions ½ cup
- Taco Seasoning Mix 1 package
- Shredded Cheddar Cheese 2 cups
- Refried Beans (Pro-tip) 1 can (Heat in the microwave first)
- Prepared Rice 1 cup (We used minute rice for convenience)
- Mexican Corn Mix 1 can (About half the can, drained)
- Large Flour Tortillas 4 to 5
- Chunky Salsa (Sweet or Spicy) 8 ounces (Depending on your preference)
Steps
- subheading: Prepare Your Baking Dish:
- To begin, preheat your oven to 350°F (175°C) and spray a spring form, round cake pan, or casserole dish with cooking spray. This will prevent the casserole from sticking to the dish.
- subheading: The Beef:
- In a large skillet over medium heat, cook the ground beef and diced onions until the beef is browned and the onions are translucent.
- Be sure to drain any excess grease.
- Sprinkle the taco seasoning mix over your beef and onion mixture. Stir well to ensure that the meat is evenly seasoned.
- Remove it from the heat and set it aside.
- subheading: Layering Time:
- In a large baking dish, start your layering with a tortilla.
- Spread a thin layer of the refried beans over the tortilla, followed by a sprinkling of prepared rice, a portion of the beef mixture, some of the Mexican corn mix, and a generous sprinkle of shredded cheddar cheese.
- Don’t forget to drizzle some of the chunky salsa over the top.
- Repeat this layering process until you’ve used all your ingredients, ensuring you finish with a final layer of cheese on top.
- subheading: Bake to Perfection:
- Slide your casserole dish into the oven and bake for about 20 to 25 minutes or until the cheese on top is bubbly and golden.
- subheading: Serve & Enjoy:
- Once out of the oven, let it sit for a few minutes to set.
- Then, slice up your casserole and serve it hot.
- A dollop of sour cream or a sprinkle of fresh cilantro complements this dish beautifully!
