Mexican Tortilla Casserole
Ingredients
  • Ground Beef Approximately 1 pound
  • Diced Onions ½ cup
  • Taco Seasoning Mix 1 package
  • Shredded Cheddar Cheese 2 cups
  • Refried Beans (Pro-tip) 1 can (Heat in the microwave first)
  • Prepared Rice 1 cup (We used minute rice for convenience)
  • Mexican Corn Mix 1 can (About half the can, drained)
  • Large Flour Tortillas 4 to 5
  • Chunky Salsa (Sweet or Spicy) 8 ounces (Depending on your preference)
Steps
  1. subheading: Prepare Your Baking Dish:
  2. To begin, preheat your oven to 350°F (175°C) and spray a spring form, round cake pan, or casserole dish with cooking spray. This will prevent the casserole from sticking to the dish.
  3. subheading: The Beef:
  4. In a large skillet over medium heat, cook the ground beef and diced onions until the beef is browned and the onions are translucent.
  5. Be sure to drain any excess grease.
  6. Sprinkle the taco seasoning mix over your beef and onion mixture. Stir well to ensure that the meat is evenly seasoned.
  7. Remove it from the heat and set it aside.
  8. subheading: Layering Time:
  9. In a large baking dish, start your layering with a tortilla.
  10. Spread a thin layer of the refried beans over the tortilla, followed by a sprinkling of prepared rice, a portion of the beef mixture, some of the Mexican corn mix, and a generous sprinkle of shredded cheddar cheese.
  11. Don’t forget to drizzle some of the chunky salsa over the top.
  12. Repeat this layering process until you’ve used all your ingredients, ensuring you finish with a final layer of cheese on top.

  14. Slide your casserole dish into the oven and bake for about 20 to 25 minutes or until the cheese on top is bubbly and golden.

  16. Once out of the oven, let it sit for a few minutes to set.
  17. Then, slice up your casserole and serve it hot.
  18. A dollop of sour cream or a sprinkle of fresh cilantro complements this dish beautifully!
