Stuffed Crab Shells
Ingredients
  • 2 boxes large shells; cooked, rinsed, and drained well
  • 3 12 oz. pkg. imitation crab meat, shredded
  • 10 to 12 oz. Swiss cheese, finely shredded
  • 1 large jar pimentos, chopped
  • ½ of a large onion, finely chopped
  • 2 to 3 stalks celery, finely chopped
  • 1 cup Hellmann's mayonnaise
Steps
  1. Mix all ingrdients well, then stir in mayonnaise until mixture is moist.
  2. You can add more or less depending on how moist you want the mixture.
  3. Using a teaspoon, fill the cooked shells with the mixture.
Notes
  • You won't use all the shells, but you have to make extra because many of them rip or break.
  • You can use Miracle Whip instead of the mayo, but, because the crab meat is already on the sweet side, I prefer the mayo.)
