Keto Microwave English Muffin

Ingredients
  • subheading: Dry ingredients:
  • 1 TBSP almond flour
  • 1TBSP coconut flour
  • ¾ tsp baking powder
  • pinch salt
  •  
  • subheading: Wet ingredients:
  • 1 tsp melted butter or oil
  • 1 TBSP heavy whipping cream
  • 1 egg
Steps
  1. Mix together your dry ingredients and your wet ingredients separately.
  2. Mix all together with a fork or whisk until smooth.
  3. Spray a ceramic ramekin of microwave-safe bowl with nonstick cooking spray, then pour in your mix.
  4. Microwave on high for 2 minutes.
  5. Let sit for a minute to cool, then turn out, split and toast in a pan with a little butter.
  6. Makes excellent breakfast sandwiches or can be used as a base for Eggs Benedict.
  7. (Add maple extract and sweetener of choice to get a healthy McGriddle substitute!)
