Ragu Alla Bolognese (Beef Bolognese Recipe)
Ingredients
  • 180 milliliters olive oil
  • 1 ½ large yellow onion finely chopped
  • 3 medium carrot finely chopped
  • 3 stalk celery finely chopped
  • 9 cloves garlic minced or grated
  • 1350 grams ground beef or veal
  • 510 grams tomato paste 1 small can
  • 750 milliliters dry red or white wine or chicken or beef stock (We used an inexpensive Chianti)
  • 1500 milliliters whole milk
  • 2382 grams whole peeled tomatoes 1 large can, certified San Marzano tomatoes recommended
  • 6 bay leaves
  • 15 to 18 sprigs fresh thyme
  • Fine kosher salt* to taste, about 2 to 3 Tablespoons
  • Freshly-ground black pepper to taste, about ½ to 1 Tablespoon
