Fast French Onion Soup ,4-8 servings.
Ingredients

  • 1 tablespoon sugar
  • 5 pounds yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • ¼ teaspoon baking soda
  • 2 teaspoons kosher salt, plus more as needed
  • ½ cup water
  • ¼ cup dry sherry
  • 6 cups homemade or low-sodium chicken broth
  • 2 bay leaves
  • 6 sprigs to 8 sprigs fresh thyme
  • Freshly ground black pepper
  • 1 baguette, sliced 1-inch thick and toasted
  • 8 ounces Gruyère or Swiss cheese, grated
