Baked Vegie Salad
Ingredients
  • Kipfler potatoes
  • Sweet potato
  • Pumpkin
  • Beetroot
  • Olive Oil
  • Feta Cheese - Dodoni
  • 4 garlic cloves
  • Lemon thyme fresh
Steps
  1. Peel and dice root vegetables
  2. Toss in baking tray with garlic and lemon thyme and drizzle with oil.
  3. Bake 30 mins
  4. Halfway through cooking, remove from oven and drizzle with oil and toss to avoid vegies sticking.
  5. Bake a further 30 mins - total 60 mins
  6. Remove from oven.
  7. Stir through fetta
  8. Serve either warm or hot
