Obiora’s Cookies
A lightly-spiced, iced maple cookie created to shower Lucas Obiora Igwenagha with love.

Ingredients
  • subheading: Cookie Dough:
  • ½ cup butter, softened
  • ½ cup unsweetened applesauce
  • 2 eggs
  • 2 cups brown sugar, packed
  • 1 cup maple syrup
  • 4 ½ cups flour
  • 4 tsp baking powder
  • 1 tsp salt
  • 1 Tbs warm spice mix
  •  
  • subheading: Warm Spice Mix:
  • 2 tablespoons ground cinnamon
  • 1 tablespoon ground ginger
  • 1 tablespoon ground nutmeg
  • 1 ½ teaspoons ground allspice
  • 1 ½ teaspoons ground cloves
  •  
  • subheading: Glaze:
  • 2 ¼ cups powdered sugar
  • 4 Tbs butter, melted
  • ½ cup maple syrup
Steps
  1. 1. Mix all warm spices thoroughly in a small bowl. Store in a recycled glass jar.
  2. 2. Preheat oven to 375°
  3. 3. Grease cookie sheets or line with parchment
  4. 4. In a large mixing bowl cream butter, applesauce and brown sugar until light and fluffy.
  5. 5. Beat in eggs and maple syrup until fluffy.
  6. 6. Combine flour, spice mix, salt and baking powder. Add to creamed mixture and mix until just combined.
  7. 7. Drop by rounded tablespoons onto cookie sheets.
  8. 8. Bake at 375° for 10 to 12 minutes until cookies are lightly golden brown.
  9. 9. Remove from pans and cool slightly before glazing.
  10. subheading: Glaze:
  11. 1. Mix powdered sugar, melted butter and maple syrup until well blended. If glaze is too thick to spread easily, add a few drops of warm water to thin.
