A lightly-spiced, iced maple cookie created to shower Lucas Obiora Igwenagha with love.
Servings: 4 dozen cookies

Ingredients
- subheading: Cookie Dough:
- ½ cup butter, softened
- ½ cup unsweetened applesauce
- 2 eggs
- 2 cups brown sugar, packed
- 1 cup maple syrup
- 4 ½ cups flour
- 4 tsp baking powder
- 1 tsp salt
- 1 Tbs warm spice mix
- subheading: Warm Spice Mix:
- 2 tablespoons ground cinnamon
- 1 tablespoon ground ginger
- 1 tablespoon ground nutmeg
- 1 ½ teaspoons ground allspice
- 1 ½ teaspoons ground cloves
- subheading: Glaze:
- 2 ¼ cups powdered sugar
- 4 Tbs butter, melted
- ½ cup maple syrup
Steps
- 1. Mix all warm spices thoroughly in a small bowl. Store in a recycled glass jar.
- 2. Preheat oven to 375°
- 3. Grease cookie sheets or line with parchment
- 4. In a large mixing bowl cream butter, applesauce and brown sugar until light and fluffy.
- 5. Beat in eggs and maple syrup until fluffy.
- 6. Combine flour, spice mix, salt and baking powder. Add to creamed mixture and mix until just combined.
- 7. Drop by rounded tablespoons onto cookie sheets.
- 8. Bake at 375° for 10 to 12 minutes until cookies are lightly golden brown.
- 9. Remove from pans and cool slightly before glazing.
- subheading: Glaze:
- 1. Mix powdered sugar, melted butter and maple syrup until well blended. If glaze is too thick to spread easily, add a few drops of warm water to thin.
