Vegan Broccoli Potato Soup
Ingredients

  • 1 cup non-dairy milk
  • ½ cup nutritional yeast
  • 2 tablespoons oil
  • ½ medium onion, finely diced
  • 1 rib celery, finely diced
  • 3 cloves garlic, finely minced
  • 2 ½ cups broccoli, finely chopped
  • 2 small russet potatoes, chopped into ½” inch pieces
  • 1 cup carrot, julienned
  • 2 ½ cups vegan chicken broth
  • ¼ teaspoon nutmeg
  • 1 teaspoon salt, divided
  • 1 tablespoon lemon juice
  • Black pepper, to taste
  • Optional: ¼ teaspoon turmeric
  • Optional: chives, for garnish
