Ingredients
  • 5 leaves kale approximately 4 cups of chopped kale or any lettuce you like
  • 1 finely diced celery stalk leave it out if you don't like celery
  • 1 finely diced apple or pear any you like
  • 7 to 8 toasted walnuts any nuts like pecans are fine

  • 2 tbsp olive oil
  • juice of ½ lemon or to taste
  • ½ tbsp honey or agave to taste
  • salt to taste
  • 1 tbsp dry or fresh parsley to taste

  • note: Please note: you can add chopped dates, goat cheese, use pears instead of apples, any nuts/seeds you like, pomegranate seeds or anything your heart desires. I enjoyed it with 2 poached eggs on top but feel free to add any protein on top like grilled chicken. Roasted chickpeas would be also amazing or tofu as a plant based version
