Ingredients

  • 1 Cup Shoyu
  • 1 Cup Brown Sugar
  • 4 Cloves Garlic finely minced
  • Thumb size ginger finely minced
  • 1 TBSP Sesame Oil
  • If you want it less sweeter, maybe ½ Cup Brown Sugar. I use Brown Sugar for color too.

  • For me, this mixture is perfect since the Natural Kiawe Smoke adds some saltiness and when infused with the rest of the ingredients, comes out balanced.

  • Shoyu, Brown Sugar, Sesame Oil, Garlic, and Ginger. Just eyeballed the amounts as I've done it so often growing up...If I threw these into my Dehydrator or Dry Box, I would've added Liquid Smoke. But, since it's in da Smoker, I get the natural Smoke. Have to add Kiawe every hour...Meat is Bottom Round, which was perfect timing since was on sale at Safeway during $5 Friday. They were a steal at only $2.50/lb.! This tray was 5 lbs.
