8 cups all-purpose flour (1 kg by weight), also *see note

2 teaspoons kosher salt (12 g)

2 ½ teaspoons active dry yeast (10 g)

2 ⅔ cups lukewarm water (630 ml)

1 tablespoon olive oil (15 ml) plus extra for bags if you plan to save dough for later
