Hanamaulu Chicken (Kauai) by Jayne Kashiwaeda
Copycat recipe from Kauai's Hanamaulu Restaurant (closed)
Ingredients
  • 5 lbs deboned chicken
  • 2 thumb size ginger, grated
  • 2 lg garlic cloves, minced
  • 2-½ tsp salt
  • 1 tsp aji
  • 5 ½ Tbsp sugar
  • 5-½ Tbsp shoyu
  • 2 tsp brandy
  • 4 tsp oil
  • ---------
  • 2 cups flour
  • 2 tsp aji
  • 2 tsp salt
  • 2 to 4 Tbsp cornstarch
Steps
  1. Soak chicken in above ingredients for 2 to 4 hours.
  2. Roll chicken in flour mixture and deep fry.
