Copycat recipe from Kauai's Hanamaulu Restaurant (closed)
Ingredients
- 5 lbs deboned chicken
- 2 thumb size ginger, grated
- 2 lg garlic cloves, minced
- 2-½ tsp salt
- 1 tsp aji
- 5 ½ Tbsp sugar
- 5-½ Tbsp shoyu
- 2 tsp brandy
- 4 tsp oil
- ---------
- 2 cups flour
- 2 tsp aji
- 2 tsp salt
- 2 to 4 Tbsp cornstarch
Steps
- Soak chicken in above ingredients for 2 to 4 hours.
- Roll chicken in flour mixture and deep fry.
