Cheesy Sausage and Rice
One Pot

Ingredients
  • 1 to 2 Tbl Olive Oil
  • 1 Green Bell Pepper - diced
  • 1 Red Bell Pepper - diced
  • ½ Yellow Onion - diced
  • 2 c Broccoli - chopped (optional)
  • 1 to 2 lb Smoked Sausage (big round link) - cut into slices
  • 1 lb Mild or Sharp Cheddar Cheese - shredded (I use less cheese)
  • 2-10 oz Cans of Cream of Chicken
  • 3 c. Chicken Broth
  • 2 Tbl Tony's or Slap yo' Mama Seasoning (optional)
  • 3 c. Minute Rice
Steps
  1. Heat oil in pot and sauté the bell peppers and onion (and broccoli)
  2. At the same time, brown the sausage
  3. Add sausage, cream of chicken and chicken broth (and Tony's) and mix in
  4. Add ½ of the cheese and all the rice and mix together
  5. Cover and simmer for 10 minutes
  6. Turn off stove and top with remainder of the cheese
  7. Cover with lid and let it rest for 15 minutes
