The Ultimate Fall Curry Pumpkin Soup with Chickpeas—Simple & Delicious
Ingredients
  • 30 mL (2 Tbsp) oil
  • 3 cardamom pods
  • 2 onions, finely chopped
  • 2 garlic cloves, crushed
  • Thumb of ginger, finely grated
  • 60 mL (¼ cup) tomato paste
  • 10 mL (2 tsp) ground coriander
  • 5 mL (1 tsp) ground cumin
  • 5 mL (1 tsp) ground turmeric
  • 5 mL (1 tsp) chilli powder
  • Around 1 Kg (2 pound) pumpkin or squash, cut into chunks
  • 500mL (2 cups) vegetable stock
  • 1 can of chickpeas, drained
  • 30 mL (2 Tbsp) plain yogourt
